Here's a little jam I did this morning.  

I used the Roland USB Quad-Capture (as recommended by Paul) and it really is excellent.  The latency on this thing is almost un-noticeable .  I recorded the guitars direct using the HiZ switch and monitored through Reaper using Vintage Amp Room VST.  A very usable setup.
